These shoots are getting earlier and earlier. I was a little worried when Nicole and Brian of Sea Bean Goods told me what time they get to the kitchen every morning. 5AM! Then around 8 they go home to get ready for their full Midtown day job.

I met Nicole and Brian on the first day of Smorgasburg when I took their photo for Nona Brooklyn. I was curious about them because I have never seen a vendor sell soup before and not just soup but chilled soup. To be honest, I never had chilled soup before because soup for me was hot and comforting. Though once I tried their soup, along with a piece of bread with pesto, my perception of soup quickly changed. Soup can be chilled and be comforting at the same time. And of course it helped that Sea Bean Goods’ soups taste fantastic.

Their week actually starts a week earlier, on Sunday which is soup testing day for them. I was invited into their home one Sunday afternoon. Earlier that morning they had gone out to the farmers market and picked up some great looking fresh corn to test their sweet corn soup idea. Once they tweaked it to their liking, it was off to the kitchen to big one giant batch to be served at Smorgasburg. The following Thursday I stopped by around 5:30am and both of them were busily cutting corn for the sweet corn soup and potatoes and leeks for a traditional vichyssoise.

Nicole and Brian work really hard and really early to bring you delicious soup every Saturday. If you’re at Smorgasburg make sure to go say hi and try some soup. Give chilled soup a chance!
